The alkalized cocoa powder is used to intensify the flavour and colour of your products.

The alkalization process has the purpose to neutralize the acids from the cocoa powder, thus eliminating the astringency and granting a special aroma. The alkalized cocoa powder is darker than the natural cocoa powder; this way, the same result is obtained with a smaller quantity of cocoa.
